Iceland is a key strategic point for NATO as readers of Clancy's 'Red Storm Rising' would know. What's more, Keflavik has two of the world's longest runways, and was a major staging post for supplies down to Saudi during the Gulf War. During any crisis in Europe, it would certainly be an important part of any air bridge, along with Reykjavik airport. Iceland also sits over the lanes that the Russian subs use to penetrate the North Atlantic, and Backfires positioned here would wreak havoc with shipping, while fighters would effectively cut the US/Europe umbilical. Just a few months ago, the Russians flew 'posturing' flights around Icelandic airspace. Regarding the 'two strips' story, Russian fighters are designed for rough strip operation, but in our scenario which is set some years hence, the smaller strips are able to take fighters and some ground attack aircraft. There are 90+ strips around the island to fly from. I can't deny our choice was also determined by the landscape... if it isn't fun to fly in, it isn't worth doing. As to whether all the strips will get taken out easily, that's up to the player. This campaign will be intense, whatever happens.
